It was delicious! Helen, quinoa is a super food and so really good for you. While it`s not a grain (it`s a seed), you treat it like one - boiling it for 10 minutes or so in salted water. Rinse it in cold water and let it `dry`. It has quite a nutty texture. I then added chopped halved cherry tomatoes, thinly sliced red onion, grated carrot, chopped cucumber, green pepper, a handful of roughly chopped parsley and 1 clove of crushed garlic. I then added salt and pepper and a lemon and olive oil vinaigrette and that was it. I`m sure you could add anything - perhaps artichoke hearts, asparagus etc but I just used what was in the fridge! It`s yummy with a slice of quiche....but then I love quiche!
